1/2 of a Sweet Yellow Onion, diced
2-3 Cloves of Garlic, minced
Put this on medium heat to saute for a little while till they are translucent.
Add:
4 Cups of Chicken Broth
3 Cans of Diced or Whole Tomatoes
After that all simmers for a little while, stick it in the blender or food processor and blend till smooth.
Chop:
3-4 stalks of Celery
2-3 Carrots
(Basically just chop same amounts of carrots and celery into same size pieces)
Add:
1 Can White Beans, drained
1 Can Kidney Beans, drained
Simmer on medium heat, and be sure to add water or chicken broth as necessary. You want the celery and carrots to be soft.
Add:
1 Teaspoon Dried Basil
1/2 Teaspoon Dried Oregano
Salt and Pepper to taste
Simmer this all together for up to two hours, you WILL lose a lot of liquid. I don't simmer for longer than 30 minutes-ish, I am impatient.
Lastly:
On medium heat with a slow boil, add 1 cup of Pasta (I used mini shells, but any small pasta would work) and cook until 10-12 minutes.
Serve with salad, garlic bread, and Parmesan cheese. Sidenote: You could add ground beef or Italian sausage if you feel so inclined. Enjoy!!
