Use this brownie recipe: http://sorensenfun.blogspot.com/2010/01/brownies-in-jar.html, I'm tellin' ya, these are awesome!
Make your own Cream Cheese Frosting with this recipe: http://allrecipes.com/Recipe/Cream-Cheese-Frosting-II-2/Detail.aspx, easy and way more delicious than canned Cream Cheese frosting (yuck, might as well be vanilla).
Here is where I found the basic idea for the brownie bites: http://littlebirdiesecrets.blogspot.com/2010/02/our-first-ever-blog-party.html, scroll down a little to find her short instructions about them.
I used milk chocolate, cream cheese, and strawberry frosting (I LOVE strawberry frosting!) You could also use vanilla and red food coloring! I almost bought some VDay sprinkles, but I am cheap.
Microwave the icing for 12 seconds in the microwave, stir and then pour the icing in a ziploc bag and cut the tip off for icing the brownies. You can NOT just "spoon the icing" onto the brownies... it looks so sloppy. Use the bags to pipe on the icing so that the bites stay heart shaped (and you don't get one large gloop of frosting, even I don't like that much frosting!).
Another thing I would have done is take a little more time and figure out how to cut the strawberries into heart shapes, that would've been so cute! On mine I just cut the strawberries in half, but you can cut a notch at the top to make the hearts.
I got about 30 hearts with a 9X13 pan and a two-ish inch cookie cutter. (I have tried and failed many times to make brownie bites in mini-muffin tins, trust me.) Anyways, make sure you have lots of people to share these with! Yay for Valentine's Day!!
