1 Tb butter
1 Tb flour
1 cup milk
1/2 lb Velveeta cheese, cut into small-ish cubes
Salt and pepper to taste
In a small saucepan, cook the butter and flour on medium low and stir until it becomes a paste. Add in the milk gradually, continue stirring. Once all the milk is in and the mixture is almost simmering, add in the cubes of Velveeta. Melt the cheese and add salt and pepper to taste.
I made 1/2 a bag of small shells and it was the perfect amount for the cheese sauce (I like mine really cheesy). Waayyy too much pasta for just me and Raleigh (I added a cut up hot dog too), but at least there are leftovers for tomorrow! You could also use this sauce for dipping vegetables like a fondue, yum. Steve just told me you could melt the Velveeta in milk without the flour and butter... but I think it would be a little thicker. Anyways, very versatile meal. And deliciously creamy! Enjoy!

That looks so yummy!!!!!! I'm a fool for mac and cheese. Lily is sitting on my lap. When she looked at the picture she pointed and yelled "SNACK." Give her a bite please :) She loves mac and cheese too. I love all your posts!
