Easy Homemade Salsa!

2 cans diced tomatoes w/ green chilis (or Rotel)
1 small onion, chopped
4 cloves of garlic, minced
2 teaspoon sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1 teaspoon crushed red pepper flakes (adjust according to how hot you like it, or you can leave it out!)

This recipe makes two almost full pickle jars! I have no idea what other people use for their own salsa, any container will use (we just happen to have pickle jars). The easiest way to make this is with a food processor, but I'm guessing it would work in a blender too. First, chop the onion and garlic (I do this in the food processor). Using a medium saucepan, add in the diced tomatoes, onion, garlic, and spices. Simmer for 20 minutes or so on medium heat, stir occasionally. Put about half at a time in the food processor (of course, depending on how large yours is) and pulse two or three times. I like mine more runny, so I pulse 4 or 5 times but you can make it however you like! I have no guarantees on whether or not you can "can" this salsa, we eat it up pretty quickly so it lasts in the fridge for a while. Anyways, it's really just a base recipe. You could also add jalapenos or cilantro, yum! Enjoy!!

Simmer for 20 minutes.
